I am planning on deploying Dgraph cloud dedicated instance on GCP. If for some reason, Dgraph server crashes, how can I restore it back to the previous normal state. How can I take backups in Dgraph.

You can just kill the instances/pods/containers and start over. But always keep the volume intact there.

Regular exports can be used for this task.
